EASY EARL GREY TEA LOAF…

Ingredients
1 x cup of mixed dried fruit
1 x mug of Earl Grey Tea
1 x tsp bicarbonate of soda
2 apples, peeled then grated
1.25 cups of Self Raising Flour
Half a cup of brown sugar
150g/5.25oz melted butter
1 x tsp vanilla essence
4 med eggs

Method

Preheat overn to 160C, 325F, Gas mark 3.
Place the dried fruit, bicarbonate of soda and tea in a bowl and leave to soak for around 2 hrs.
Place the grated apple, sieved flour and sugar into a bowl and mix together.
Add the melted butter, vanilla essence and fruit mixture and mix together.
Line or grease a loaf tin and bake for 45 -55 minutes or until your skewer comes out clean.
Cool for a while before turning cake out on a wire rack.
