Rich Fruit Cake

If you put a teaspoon of sugar mixed with your yeast and water, it will make it raise better.

Remember to never mix salt directly with the yeast and water mixture as the salt kills the raising action.

CHOCOLATE SMARTIE CAKE…

Ingredients
200g self raising flour
2 level tsp baking powder
50g cocoa
4 large eggs (mixed)
225g butter or spread
225g light soft brown sugar
2 tbsp milk

Topping
2 level tbsp cocoa
75g butter or spread
300g icing sugar
2 tbsp milk
2 level tbsp golden syrup
Packet of smarties

Method
Preheat oven 180C/160CFan Gas 4
Line a 33 x 23cm shallow tin with baking paper
Sift the flour, baking powder and cocoa into a large bowl
Add the the rest of the ingredients
Whisk until evenly mixed and creamy
Pour into the tin and level top
Bake for 35-40 mins or until your testing stick comes out clean
Leave to cool in the tin for 5 mins, then leave to cool on a wire rack

Topping
Sift the icing sugar and remaining 2 tbsp cocoa into a bowl
Put the butter in a small pan with golden syrup and milk
Heat gently until melted ( do not allow it to boil)
Add the icing sugar and stir until smooth
Spread on top of the cake and then decorate with smarties.
