If you replace sugar in your recipe with half the amount in honey or half dried fruit and half fruit juice, your baking becomes a lot less calories. You can also save even more calories and fat by replacing half the fat in the recipe with bananas and yoghurt. Also use wholemeal flour instead of white when baking bread, scones and muffins.

ALMOND HONEY AND POLENTA LOAF CAKE Ingredients 225g/8oz unsalted butter 225g/8oz golden caster sugar 4 large free range eggs 25g/1oz polenta 25g/10z self-raising flour 175g/6oz ground almonds 1tsp baking powder 2tbsp honey Method Heat oven 170C 150C fan 325F Gas 3 Grease or line the loaf tin. Cream butter, sugar until light and fluffy then add the eggs one at a time, whisking well. Stir in the rest of the ingredients gently until smooth and pour into cake tin. Bake for 1 hour 15 to 1 hour 25 until skewer is clear when inserted in the case.
