PEPPERMINT CHOCOLATE BROWNIES…

Ingredients
200g dark chocolate
200g of chopped chocolate peppermint (ie Elizabeth Shaw mints or Mint Chocolate Sticks)
Vanilla Essence
300g caster sugar
125g plain flour
4 eggs

Method
Preheat over to 190C Gas 5
Line an oblong tin with baking parchment
Melt the dark chocolate and butter in a bow over simmering water
Lightly beat in the eggs and ½ teasp vanilla essence
Add the sugar, flour and chopped chocolate mints
Spoon mixture into the tin
Bake for 45 mins until set to touch in the centre
Leave for 10 mins to cool before taking out of tin and placing on a wire rack
