    QUICK, LIGHT AND EASY APPLE AND MIXED FRUIT CRUMBLE…

    If like me you love crumble then my recipe for this delicious pudding is just for you. I have used Splenda Light for half my sugar but if you prefer all caster sugar that is fine, I have also use half fat spread but again if you prefer butter that is also fine. I am just always looking to lower the calorie and fat value of my puddings.

    Ingredients

    Crumble
    175g/6oz Plain Flour
    75g/3oz Low Fat/or full fat Margarine
    50g/2oz Caster Sugar or Splenda
    25g/1oz Demarera Sugar

    Apple & Mixed Fruit
    2 Large or 3 Medium Bramley Apples (cut and sliced)
    1 Large Tablespoon Mixed Dried Fruit
    1 Tablespoon Splenda or Caster Sugar
    1 level teaspoon cinnamon

    Method
    Preheat oven to Gas Mark 7, 218C, 425F
    Place the cut and sliced apples in a bowl and add the dried fruit, sugar and cinnamon
    Add 2 tablespoons of water
    Pop in the microwave with cover and cook for 5 mins
    Take cover off, stir and cook for a further 1.5 mins
    Place mixture in the bottom of 4 medium or 6 small ramekin dishes
    Place all your ingredients for the crumble in a large bowl
    Using the lowest speed on your electric hand whisk, whisk ingredients until they resemble crumble,or rub the butter into the flour and sugar by hand
    Put 2 tablespoons of crumble on each ramekin dish (you will have enough over for another batch)
    Cook in the centre of your oven for around 20 mins or until golden
    Serve with ice-cream or low fat crème fresh
