    EASY GLUTEN AND WHEAT FREE ORANGE CAKE…

    Ingredients

    175g/6oz unsalted butter or margarine
    175g/6oz caster sugar
    175g/6oz gluten free self raising flour
    4 medium eggs, lightly beaten
    2 Oranges (finely grate the oranges)

    Method

    Preheat oven to 180C/Mark 4
    Grease and line a loaf tin
    In a large bowl, beat together the butter and sugar with an electric hand whisk until pale and fluffy for no longer than 2 mins
    Gradually beat in the eggs
    Add grated orange of the two oranges, and the juice
    Fold in the flour
    Put mixture into the loaf tin
    Bake for 40 -50 mins or until skewer inserted in the centre comes out clean

      Dad demolishes my ordinary orange cake which I always bake for him here at home and take when I go to see him, 🙂 x
