    PINEAPPLE UPSIDE DOWN PUDDING CAKE…

    upside down cake

    Ingredients
    Small tin of pineapple rings
    4oz/100g Butter or Margarine
    4oz/100g Caster Sugar
    4oz/100g Plain Flour
    ½ level teasp Baking Powder
    2 Medium eggs (well beaten)
    2 tablespoons milk

    Method

    Preheat oven 350F/Gas 5/
    Grease and line an oven proof dish with greaseproof paper
    Drain pineapple slices
    Arrange the slices on the paper in you dish
    Cream the butter and sugar together then gradually add the beaten eggs
    Add Milk
    Sieve flour and baking powder into the mixture folding in carefully with a metal spoon
    Pile the mixture onto pineapple slices and smooth top even
    Cook in the centre of the oven for 35 mins
    Serve hot or cold

        Oh, it was sooooooo good. For some reason I have a ton of bananas at the moment so I am going to have to find another recipe other than banana cake !!!

            I’ve never made banana muffins or banoffee pie before, I must give it a go. I had a baking spree on today and made a soggy orange cake, a fruit cake and a bag of crumble then made some apple and fruit crumble. Feel better after all that baking now,:):)

              But you can if you want to bda, Ive been dieting for six months now and lost a stone and still baked and want to lose another stone even if it takes me another twelve months but at the same time I want to bake and eat things I fancy every now and then. It portion contol really which I’m sure you know that anyway 🙂
