Always soak your dried fruit overnight and for extra flavour soak the fruit in apple or orange juice or marinate in your favourite liqueur (brandy) for three days, stirring it every 12 hours.

I am only making a very small one this year basically for the kids as Becci doesn’t like fruit cake with marzipan…she don’t like marzipan…much prefers a nice sponge with gooey jam and cream
