    EASY APPLE LOAF CAKE…

    Ingredients
    450g (1lb) Cooking apples, peeled cored and finely sliced
    115g (4oz) Soft Brown Sugar
    115g (4oz) Butter or margarine
    115g (4oz) Sultanas
    ½ teasp cinnamon
    Grated rind of small lemon
    1 Egg
    25g (1oz) Demerara Sugar

    Method
    Preheat oven to Gas Mark 4/350F/180C
    Line or grease a loaf tin
    Sift flour and spice together and place in a large bowl
    Add grated lemon rind
    Rub in the fat until mixture resembles fine breadcrumbs
    Stir in the soft brown sugar, apples and sultanas
    Beat egg into the mixture adding a little milk if necessary
    Place in loaf tin and sprinkle with the demerara sugar
    Bake for 1-1 ½ hours until golden brown and when you skewer is clear when insterted into the cake.
