APPLE SCONES…

Ingredients
350g/12oz Self Raising Flour
2 tsp baking powder
100g/4oz butter, cut into cubes
4 tbsp golden caster sugar
1 -2 Bramley Cooking Apples, peeled, cored and finely diced
1 egg yolk
Pinch of salt
125ml/4fl oz milk
6.5cm/2.5 round, metal cutter

Method
Preheat oven to Gas 7.220C (200 Fan oven
Add flour and baking powder to a large bowl and mix in a pinch of salt
Add butter and rub in with fingertips until it looks like breadcrumbs
Stir it into the sugar and apple
Mix egg yolk with milk and gradually add to create a soft dough
Lightly flour a board and transfer the dough onto it.
Flatten to around 1” thickness
Cut into rounds
Lightly grease and baking tin
Place rounds and brush with some milk
Cook for 10-15 mins until golden
