    EASY COCONUT CAKE RECIPE…

    EASY COCONUT CAKE RECIPE…

    Ingredients

    175g (6oz) caster sugar
    175g (6oz) desiccated coconut
    175g (6oz) butter, softened
    225g (8oz) self-raising flour
    3 medium eggs
    Zest and juice of 1 lemon
    2 tbsp milk

    Method

    Preheat oven to 170C Gas 3 or 338F
    Grease or line a loaf tin
    Put butter and sugar into large bowl and beat with electric hand whisk until pale and fluffy
    Mix the beaten eggs, flour, lemon zest and juice, milk and 150g (5oz) coconut
    Spoon mixture into cake tin
    Sprinkle over the remaining coconut
    Bake for about 1 hr 5 mins or until a skewer inserted in the cake comes clean
    Leave to cool in the tin for 10 mins before placing on wire rack.

      I made the coconut cake but it came out very dry I followed the recipe 2 the letter any ideas as 2 y this was

      Was your butter soft ? also did you put the cake in the middle of the oven? Unfortunately quite a few little things can cause this even leaving it in the oven for a fraction bit longer can make it dry. I have to bake in a gas oven which is nothing like an electric oven and have to check 10 minutes earlier to stop it drying out. Hope that helps.

      it was a gas oven and I took the cake out 15 min early could it have the size other tin I used

      Hi again Jason,
      Yes it could definitely have been the size of the tin you used. Mine’s gas and I must admit that it has taken a lot of practice to get them spot on, they are quite different being cooked in gas rather than electric. It will just be trial and error but you will get there in the end, I promise 🙂

      I’d say go for it Jo, just trial and error with the amount you put in, maybe one tablespoon for your first try 🙂

      I don’t normally bake, but I do LOVE coconut cake. This recipe is so easy and always turns out delicious. It lasts for a week wrapped in foil (as long as the rest of the family don’t find it!!

      Made this cake for the first time this afternoon and I love it. the only down side is I wouldn’t recommend the spreading of coconut over the cake while cooking as when it comes to turning out the cake the cooked coconut goes everywhere

      Made this cake today, and it was really lovely. Was easy to make. Was a little dubious as the mixture going in the tin was quite a thick consistency but the result was a very delicious cake!

      I like coconut and have had a packet of dessicated coconut in the cupboard for ages looking for something to do with it. I have now used it in your recipe and the cake is in the oven as I type. As I was tidying up I noticed the Best Before date on the coconut; Sept 2009!! Ooops. I’m sure it’ll be fine.

      I’d like to try this, since I love coconut cake! But I’m wondering, do you need to use a loaf tin? Since I don’t have one :s I have a normal baking tray though…
