    ALMOND HONEY AND POLENTA LOAF CAKE…

    ALMOND HONEY AND POLENTA LOAF CAKE

    Ingredients
    225g/8oz unsalted butter
    225g/8oz golden caster sugar
    4 large free range eggs
    25g/1oz polenta
    25g/10z self-raising flour
    175g/6oz ground almonds
    1tsp baking powder
    2tbsp honey

    Method
    Heat oven 170C 150C fan 325F Gas 3

    Grease or line the loaf tin. Cream butter, sugar until light and fluffy then add the eggs one at a time, whisking well. Stir in the rest of the ingredients gently until smooth and pour into cake tin. Bake for 1 hour 15 to 1 hour 25 until skewer is clear when inserted in the case.
