    CHOCOLATE CHIP COOKIES RECIPE…

    CHOCOLATE CHIP COOKIES RECIPE…

    Ingredients
    100g Butter or Margarine
    100g Caster Sugar
    1 Egg (beaten)
    175g Plain Flour
    ½ tsp Baking Powder
    ½ tsp salt
    1 tsp Vanilla extract
    150g plain chocolate, coarsely chopped (or choc chips)
    For a more chocolatty taste add 50g cocoa powder

    Method
    Preheat oven to 200C Gas 6
    Cream together the butter and sugar with a hand mixer until light and fluffy
    Gradually beat in the egg and vanilla extract
    Sift in the flour, baking powder and salt and mix together
    Stir in the chocolate chips
    Grease two baking trays
    Using 2 teaspoons, place about 18 dollops of the mixture onto greased trays, leaving enough space for them to spread. Smooth down the cookies by dipping a teaspoon in cold water.
    Bake for 12 – 15 mins
    Leave to cool for five minutes then place them on a wire rack

    APPLE AND OATMEAL COOKIES….

    Ingredients (makes around 48 biscuits)
    110g (4oz) Butter or Margarine
    175g(6oz) Honey
    1 Egg (beaten)
    1 tsp vanilla
    90g (3oz) Stoneground Wholemeal Flour
    ½ tsp bicarbonate of soda
    ¾ tsp ground cinnamon
    125g (4.25oz) Porridge Oats
    1 apple, cored and chopped

    Method
    Preheat oven to 190C Gas 5
    Cream the butter, honey, egg and vanilla until smooth
    Combine the flour, bicarbonate of soda and cinnamon and stir into the creamed mixture
    Mix in the oats and apple
    Grease two baking trays
    Drop teaspoonfuls onto a greased baking tray
    Bake for 8 – 10 mins
    Leave to cool for five minutes then place them on a wire rack
