    EASY ETON MESS…

    Ingredients

    4 Meringue nests, crushed
    Three quarters of a pint of double cream, very lightly whipped
    1 Tablespoon Caster Sugar
    9oz/255g Strawberries
    A few drops of vanilla essence
    2 heaped tablespoons of Icing Sugar
    Juice on one large lemon

    Method

    Add lemon juice to icing sugar and leave for one hour, then whisk to a chunky purée
    Cut strawberries into quarters and sprinkle on the vanilla and caster sugar and leave for 15 minutes
    Fold the strawberries into the cream and add the crushed meringue
    Pop into glasses

        Thanks Janet, I’ve had a lovely quiet day after some acupuncture at the pain clinic and resting this afternoon. I feel totally relaxed. Hope you have also had nice day 🙂

      Love doing Eton Mess – it’s so quick and easy. I have a low fat version which uses Greek yoghurt and fromage frais, and golden caster sugar. This one sounds very posh and delish!
