3oz/85g remove skin and coarsely chop the apples
3oz/85g caster sugar
3oz/85g currants
4oz/ breadcrumbs
3 Medium eggs
Finely grated rind of half a lemon
half a teaspoon of cinnamon
1 Tablesp Brandy


Mix all the ingredients well together
Turn into a well greased mould or basin
Steam for 2 hrs
Cover, and cook for 3 1/2 minutes on full powder, or until the pudding appears set when gently jiggled, and the top is sticky.

Serve with fresh cream
