As I not only write on this Afternoon Tea Blog but also for a local Tea/Coffee shop I have the best excuse ever to go and try out different afternoon teas and write a blog post about them.   Today I went quite local to me to Cockliffe Country House Hotel – which is a 17th century former farmhouse set in the heart of rural Nottingham, bordering the historically significant Sherwood Forest. Situated in the heart of Burntstump Country Park.   They specialise in banqueting and conferences, and offer a peaceful and private environment in 3 acres of private grounds.and is well…

According to the UK Tea & Infusion Association they are now saying that a regular intake of flouride is recommended to protect against dental caries and gum disease. Studies show that the polyphenolic activity of tea may also benefit oral health. 2-3 servings of tea a day contributes to fluoride intakes but levels don’t exceed European safe limits and are not even high enough to reach recommended levels. This suggests that a higher tea consumption of 4-5 cups daily would be better for our dental…

A cup of tea and cake at Dunelm can be just as tasty as having it at a nice garden centre/restaurant or tea room. I don’t know about you but I can spend hours walking around Dunelm and always manage to find something new to buy. But do you always stop and have a tea and cake while you are in the store? Well if you haven’t been before then I can highly recommend it especially their tea cakes, which are large square ones and more than enough for a snack. The cakes vary daily but this time I tried…

After being indoors for over 5 days with a throat, chest and ear infection I decided a breath of fresh air was the next best medicine. Hubby decided a trip over to our local garden centre ‘Timmermans’, would be a better option then we could have a cup of tea and a cake. Timmermans has been updated a great deal over the last twelve months and have won awards from the Garden Industry. They have a delightful eating area which is called ‘Belle & Joe’s Kitchen’. Belle & Joe’s Kitchen was voted as the ‘BEST GARDEN CENTRE CAFE IN NOTTINGHAMSHIRE’ by the…

For firmer whipped cream, beat it with honey rather than sugar. If you add a beaten egg slowly to your batter mix it prevents the batter from becoming too stiff. Eggs will whip more easily if left for 10 minutes in cold water before breaking. If you want firm meringues, add a teaspoon of cornflour to the sugar before beating into the egg white, and…

Of course with different strengths of chocolate this does mean there is a choice of pairings. With dark chocolate, try Assam, Darjeeling, Earl Grey, Gyokuro, or Oolong. With milk or white chocolate try Darjeeling, Dragonwell, or Oolong, According to Linda Villano from SerendipiTea. “When approaching the Tea & Chocolate pairing, the possibilities are endless so first narrow down the number of teas you will be pairing within each category and identify them on paper. We all try to make our cakes taste delicious but at the same time it’s important to have the right texture to your cake. Some tips I have found to help you make the best cake texture are – Add 2 tablespoons of salad oil to your cake mixture, as this can keep the mixture moist and less crumbly. 2. Try using buttermilk instead of milk as it gives a better texture to your        cake. For every 250ml of buttermilk used add half a teaspoon of baking soda. 3. If you weigh four whole eggs in their…
