    SULTANA, AND CINNAMON APPLE PIES IN POTS…

    Apple Pie

    Ingredients
    You will need about 8 pots (around 350ml side) or 10 ramekin dishes
    800g /1.75lb of ready made sweet shortcrust pastry
    100g /3.5oz butter
    100g /3.5oz soft light brown sugar
    100g/3.5 oz sultanas
    5 Baking apples, peeled cored and chopped
    Juice and zest of ½ a lemon
    1 teaspoon of ground cinnamon
    2 egg yolks (beaten)
    Caster sugar to sprinkle
    Flour for rolling pastry

    Method
    Preheat your oven to 180C/Gas 4
    Melt the butter in a large pan then add the sugar and mix until slightly brown
    Add the apples,sultanas, lemon juice, zest, and cinnamon
    Cook or microwave your apples until soft
    Dust a little flour to your work surface and rolling pin
    Flatten pastry and roll into circles around an inch thick then cut out cirles to match pie lids, making sure they are slightly larger than your chosen pots of remekin dishes
    Fill the dishes with the pie filling then pop on the pastry lids
    Crimp pinch the pastry to seal the pie
    Mix the beaten egg and a splash of milk and brush this over the top of each pie
    Bake for 20 – 25 minutes in the centre of the oven until the pastry is golden brown

        Hi m, these are perfect for dinner parties. I’m not too bad today thanks, more acupuncture first thing tomorrow which is brilliant. Glad you still plodding along, we have to do that really don’t we? :))
