Add 2 tablespoons of salad oil to your cake mixture, as this can keep the mixture moist and less crumbly.

That’s a most useful tip. I expect it’s the same reason you are supposed to put oil into bread.

Another good tip. I sometimes swap one of the eggs from a cake recipe for a tablespoon of mayonnaise which does much the same thing

My daughter mentioned oil as an ingredient of a cake recipe that she was using recently – this surprised me but here you have explained the reason for it 🙂
