Ingredients
225g/8oz mixed dried fruit (raisins, sultanas, currents )
250g/9oz Self Raising Flour
200g/7oz soft light brown sugar
1 large egg
1 tsp vanilla extract
300ml/half a pint of Earl Grey Tea
Method
Soak the mixed dried fruit in the tea overnight or for at least 4 hours
Preheat oven 175C/325F/Gas 3
Line or grease a 2lb loaf tin
Add the rest of the ingredients and mix by hand or use a mixer
Place all ingredients into loaf tin and bake for 1 ¼ to 1 ½ hrs

I primarily make loaf cakes simply for the easyiness of making them using loaf tin liners but they all seem to turn out ok and keep well in the cake tin. 🙂

It’s soooooo easy with a loaf tin and loaf liner then just whisk everything together and bobs your uncle – you have a nice cake to eat. 🙂
I’m impressed (you serve this with cucumber sandwiches too?)like the Barm Brack recipe I use, adding vanilla extract and replacing Typhoo with Earl Grey Tea!
