    EASY CARROT AND SULTANA LOAF CAKE…

    Ingredients

    175g/6oz Light Soft Brown Sugar
    200g/7oz Self Raising Flour
    300g/10oz (3 or 4 carrots)
    100g/4oz Sultanas
    4 Medium Eggs
    150ml sunflower oil or Flora Cuisine
    2 teaspoons cinnamon
    1 teaspoon ginger

    Method

    Reheat oven to 180C/350F/Gas 4
    Line or grease your loaf tin
    Place all the ingredients except for the carrots into a mixing bowl and whisk until all the ingredients are blended together
    Add the carrots and whisk again
    Place the mixture in your loaf tin
    Bake for 45-55 minutes or until your skewer comes out clean
    Cool on a wire rack
    Top with topping of your choice, ie butter icing, cream or icing sugar with lemon

        One I put together myself from a few different recipes as my son adores carrot cake. There’s not much left from the bake yesterday so I guess he likes it, :):)
