    EASY CUP OF TEA LOAF CAKE…

    Ingredients

    500g/1lb 2oz self-raising flour
    500g/1lb 2oz mixed dried fruit
    250g/9oz caster sugar
    375ml/13.fl oz of cold flavoured tea (fruit, black, any type or a mixture)
    1 egg
    1 tsp mixed spice
    1 tsp nutmeg

    Method

    Line a 2lb (900g) loaf tin
    Place the mixed dried fruit and caster sugar in a large bowl and pour over the cold tea
    Stir well and leave to soak overnight or for at least 4 hours
    Pre heat the oven to 180C, 350F Gas 4
    Add the egg to the mixture
    Sift in the flour, mixed spice and nutmeg
    Stir until the mixture is well blended
    Spoon mixture into your loaf tin
    Bake for 1 hour 10 minutes or until a skewer inserted in the centre comes clean
    Leave to cool before serving

    This cake can be toasted and is delicious with a bit of butter or honey on.
