    EASY COFFEE AND WALNUT CAKE…

    EASY COFFEE AND WALNUT CAKE…

    Ingredients
    175g (6oz) Self Raising Flour
    175g (6oz) Softened Butter
    175g (6oz) Caster Sugar
    1 ½ tablespoons of instant coffee mixed with 2 tablespoons of Boiling Water
    75g (3oz) Chopped Walnuts
    1 ½ tsp Baking Powder
    3 Large Eggs, lightly beaten

    Method

    Preheat oven 175C/325F/Gas 3
    Line or grease a 2lb loaf tin
    Place all ingredients except for the coffee and walnuts and whisk together for no more than 2 mins. Add the coffee and walnuts and place into loaf tin
    Bake for 40 -60 minutes or until your skewer comes clean when inserted in the centre of the loaf cake.
